Authentic Sicilian Brioche col Tuppo.
The genuine artisan Sicilian brioche, selected for B2B supply: gelaterias, bars, restaurants and HoReCa distribution. Artisan quality, extended shelf-life in ATM Capsule, shipped across Europe.
The Taste of Authentic Sicily
At Sicilus Brioche we select and supply genuine artisan Sicilian brioche. The "tuppo" is more than a shape: it is the result of slow fermentation, carefully chosen ingredients and a bake calibrated to last — even after shipping.
High-hydration flours, selected fats, long cold-fermentation times: every step in the process is designed to give the professional a brioche that holds up under gelato, keeps its softness and arrives intact.
- ✔ 100% artisan craftsmanship, authentic Sicilian process
- ✔ Slow cold fermentation for lasting softness
- ✔ Selected Sicilian ingredients, naturally citrus-scented

Frequently Asked B2B Questions
Answers to the most common questions from gelaterias, bars, pastry shops and HoReCa distributors evaluating our Sicilian brioche supply.
What is the minimum order for B2B supply?
We do not impose any minimum order quantity: the smallest unit is a single box of 26 brioche, ideal for venues that want to test the product before scaling up. For high-rotation gelaterias and HoReCa distributors we organise continuous supplies on full pallets, calibrated on your venue's actual rotation.
How many days does the order take to arrive in Italy and Europe?
Our Sicilian brioche are prepared at the time of order to guarantee maximum freshness, then shipped as soon as ready. Indicative courier delivery times: 2-3 business days in Italy, 3-5 business days in the main EU countries. Ambient-temperature shipping with no cold chain required, thanks to the ATM Capsule shelf-life.
What is the ATM Capsule and how long does the brioche last inside?
Our ATM Capsule (Modified Atmosphere) is the protective packaging in which each brioche is sealed right after production: the inner air is replaced with a mix of inert food-grade gases that block oxidation and microbial proliferation without preservatives. Best-Before date from production at ambient temperature: 70 days for Brioscia col Tuppo, Brioscia al Cioccolato and Mini Brioche; 90 days for Paffutella and Panzotta.
How do I store the brioche once received in my gelateria?
While the ATM Capsule is intact, store at ambient temperature (label range +4 °C / +28 °C), away from direct heat or light, until the use-by date on the package (70 or 90 days from production depending on the reference). Once opened, the product must be consumed within 24 hours. No cold chain required in storage or at the point of sale.
What payment methods do you accept?
We work exclusively with advance bank transfer upon order confirmation: once you receive the order confirmation with the price detail and logistics summary, you make the transfer and we start production. This streamlined procedure guarantees absolute freshness and a reserved price with no unsold stock.
How does invoicing work for EU customers?
SICILUS SRL is registered with the VIES system for intra-Community operations. EU business customers with a valid VAT number registered in VIES are invoiced under the non-taxable VAT regime pursuant to art. 41 DL 331/93, with no Italian VAT charged and reverse-charge applied in the destination country. For Italian customers the standard 10% VAT rate on bakery products applies.
Can I place a small first order to test the product?
Yes. The minimum unit of a single box of 26 brioche is designed precisely so you can autonomously assess the quality of the brioscia col tuppo, the integrity of the ATM Capsule after transport and the actual yield in your venue, without exposing your business to a significant initial investment.
Which countries do you ship Sicilian brioche to?
We ship across Italy and to all EU countries, including France, Germany, Belgium, the Netherlands, Luxembourg, Austria, Spain, Portugal and Ireland. The ATM Capsule shelf-life enables ambient-temperature shipping with no cold chain or special logistics handling required.
What is the difference between Brioscia col Tuppo and Panzotta?
Brioscia col Tuppo is the classic Sicilian brioche, recognisable by the small dough ball on top (the 'tuppo'), the natural support for granita and gelato — exclusively sweet. Panzotta is a round, tuppo-free brioche made without lard, suitable for a vegetarian audience: it works for both sweet fillings (gelato, creams, jams) and savoury ones (mortadella, prosciutto, fresh cheeses), opening your venue up to quick lunch and street food too.
Where can I find the full ingredient list, nutritional values and allergens?
Each reference has its updated ingredient list published in full on the product pages. The declared allergens common to the entire line are gluten (wheat flour), eggs (yolk) and milk (whole milk powder), in compliance with Reg. EU 1169/2011. The complete technical sheet with batch-level nutritional values is available as a PDF on B2B request, as the official document for your venue's HACCP compliance.
