Artisan brioche is a highly hydrated product, rich in eggs and milk. In standard packaging it deteriorates within days — a significant obstacle for any long-distance distribution. ATM technology solves this problem at its root, without altering the product in any way.
1. What is Modified Atmosphere (ATM) packaging?
Unlike traditional flow-pack bags or standard bakery wrapping, the rigid thermoformed ATM capsule replaces the internal air with an inert food-grade gas mixture — primarily nitrogen — that blocks oxidation and microbial growth. The result is a product that retains its original softness, aroma and moisture for weeks, at room temperature, with no preservatives.
Heat-sealing machines extract the air from the rigid tray, inject the gas mixture, and thermally seal a high-barrier protective film. The brioche stays sealed at room temperature until its best-before date: 70 days for Brioscia col Tuppo, Chocolate Brioche and Mini Brioche; 90 days for Paffutella and Panzotta.

By operating on a Make to Order model, every batch is produced only once the order is received. This delivers two concrete advantages for your business:

3. Waste reduction for gelaterias and cafés
An unopened ATM capsule keeps the product until its best-before date. On a quiet trading day, if you do not open a capsule, the product remains perfectly usable in the days that follow. This significantly reduces waste compared to traditional baked goods, which must be discarded within 24 to 48 hours of being displayed.
